Pumpkin muffins

I made these pumpkin muffins last week and they are so delicious! My first pumpkin creation of the fall. I need to make it a permanent staple on my shopping list till the end of the year.

Ingredients:

  • 2 cups whole wheat flour
  • 1/4 cup sugar
  • 1 can pumpkin
  • 1/2 cup sugar free applesauce
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tbsp baking soda
  • 1 tsp baking powder
  • 1 tbsp ginger
  • 2 tbsp cinnamon
  • brown sugar – optional

Directions: Preheat oven to 350 degrees. Combine flour, sugar, salt, baking soda, baking powder, baking soda, cinnamon and ginger. In a separate bowl combine the pumpkin, applesauce, vanilla and eggs. Combine wet and dry ingredients until just combined. Scoop batter into cupcake liners that have been sprayed with non-stick spray. Fill almost to the top and sprinkle brown sugar on top. Bake for 20 minutes.
